L'Enclume Residency at Bathers' Pavilion in Sydney
I am incredibly excited to announce my first ever Australian residency at Balmoral Beach’s iconic Bathers’ Pavilion in Sydney.
My team and I will be at The Bathers’ Pavilion for six weeks from 15 July to 30 August 2020, bringing a taste of L’Enclume and The Lake District 10,000 miles to the beaches of Australia.
The philosophy of The Bathers’ Pavilion is closely aligned with that of my UK restaurants; using the very best local and seasonal ingredients available. Head Chef Cameron Johnston will be joining us at L’Enclume in April to see what we do in The Lakes, before working alongside us again, in his own kitchen during our residency.
We will be creating a multiple course tasting menu made up of an adapted selection of L’Enclume dishes that incorporate native ingredients from farms and fisheries located close to Sydney. The crockery will be handmade in Australia and wine pairings and a comprehensive wine list will be overseen by my sommelier team, incorporating local Australian wines.
“It’s a dream to bring the L’Enclume experience and ethos to the other side of the world, and to a country I personally have a real affinity to. Showcasing what we do so far from home will be a great opportunity to engage with a different audience who may know nothing about us. Both L’Enclume and Bathers’ Pavilion are in areas of natural beauty and in destinations that are awash with outstanding ingredients. I couldn’t think of a more appropriate place in Sydney to do it. Guests can expect a menu of some of our favourite dishes from L’Enclume, to include some classics, but with a few seasonal tweaks here and there according to the ingredients we have available to us.”
Open for lunch Wed–Sun, and dinner Tue–Sun, $350 for the food menu, payable at time of booking. Tailored wine pairings available on the night priced at $200, $350 and $1100 per person.
Bookings will open online via Bathers’ Pavillion from 25 February, 9am AEST. A private dining room is also available to book and can accommodate 20 diners.
