Tasting Note
A wine for those “au natural” geeks out there. This is a blend of Chardonnay & Sauvignon Blanc that saw ageing for 2 years on its lees in large Austrian oak barrels. It’s a style of wine that Sommeliers love due to that its unique, fun, and different. There’s a touch of residual sugar in there also, giving the wine a slight “spritz”. Despite that its well-mannered, textured, and full of bright orchard fruits, as well as fresh herbs, and citrus aromas. The palate is delightful, with an acidity to match – this is certainly one for trying!
Pairing Notes
Confit Jerusalem Artichoke, Stout Vinegar, Goat's Cheese, and Malt
A delicious pairing. The texture of the wine pairs beautifully with the richness of the artichoke and malt, with that acidity cutting through the goat’s cheese perfectly. One of our favourite pairings for sure.
